I was chatting with some British friends tonight about my dinner menu. I felt self-conscious admitting that I was planning to make my version of a British classic, shepherds pie.
A Texas version, I said, likely not authentic. As long as it has lamb and potatoes, they said, it’s close enough. And so I learned that beef and potatoes is called cottage pie.
