despite last week’s failed crock pot experiment, i decided to get back on that horse and try again.this week i am trying a cheesy tortellini dish. it was very simple to put together, which is good because it has been a hair-raising kind of day (sick kid, dog fight, emergency trip to vet, teacher inservice…).
i made one mistake, but i think it is going to turn out ok. it probably would have been smart to put all the other ingredients in before the spinach. i was wavering on the tortellini, because i have the fresh kind and not the frozen ones, and i am concerned they might get overcooked.
the recipe calls for 1 bag frozen tortellini, 2 cans italian style tomatoes, 4 cups vegetable broth, one package cream cheese (cubed) and a bag of fresh spinach. put all ingredients in the crock pot and cook on low for 5 hours. you can find the original recipe here.
