i will admit that i am not the best about leftovers. i love the idea of them, and of course the convenience of cooking fewer meals, but after eating something twice, i often lose a little enthusiasm for a particular dish.
earlier this week i made a big crock pot of curried lentils and sweet potatoes. it was a new recipe for us, and definitely tasty. we ate it the first night with naan and the second night with rice.
now today’s lunch is meal three for me with this dish, so i decided to get a little experimental. i took some leftover curry, some rice, an egg, a handful of shredded cheddar cheese, a little hot sauce, and mixed it all up in a bowl.
my initial inspiration was curried lentil sweet potato rice cakes, with a little extra kick from the cheese and the hot sauce.
they looked great while they were sizzling away in the pan, but clearly my stabilizing agent wasn’t strong enough (maybe i needed two eggs, or some bread crumbs?). they didn’t really maintain their integrity when it came time to flip them over.
the good news, is that even if they weren’t really photogenic, they tasted amazing!! yum!






Coming over from Nano Poblano! i am not very good at using leftovers creatively. Right now I have a fridge full of them and need to do something about that today. My husband keeps telling me I should cook lentils but I haven’t done that yet—maybe this will inspire me!!!
