tasty new dinner discovery

IMG_4792you guys have probably caught on that i  love to cook.  since mr p and i (mr p more than me) have been working hard to make ourselves a little more healthy, i have been looking for recipes that support that goal.

one of the things i have been trying to do is to increase the number of vegetarian meals we eat.  my concerns over the way conventional meat animals are treated, as well as the toxins the meat seems to contain, have grown with each new announcement from the fda.

while i wish we could afford to purchase only humanely treated, natural meats, that just isn’t practical. so for now, we embrace the vegetarian alternatives!  one of my friends in a facebook group for mom’s looking to get fit posted a link to this recipe for spinach and quinoa cakes.  i tried it last night and it was delicious!

i followed the recipe for the most part, with a few tweaks to account for two diners and a zucchini in my veggie drawer that needed to be eaten.

cooked quinoa (i started with one cup of uncooked quinoa and followed the recipe on the package), 2 eggs, two handfuls spinach, one grated zucchini, garlic, parmesan cheese, smoked paprika, cumin, salt and pepper, herbs.

cook quinoa according to directions, let cool. saute spinach, zucchini and garlic until soft,  also let cool.  mix quinoa, spinach, garlic, zucchini, eggs, parmesan and seasonings in a large bowl.

heat oil of choice in a skillet,  form patties out of quinoa mixture.  gently place patties into heated oil and cook for 3-4 min on first side, turn, cook 3-4 minutes on other side.  let drain on a paper towel. before serving.  while cakes are cooking, make a sauce out of plain yogurt, lemon juice, herbs and spices.  serve and enjoy!
