chocolate-y cupcakes with purple icing

IMG_4295as much as i strive to make our home a “yes” environment, i sometimes feel like i am constantly saying “no no no!”

“please don’t jump on the couch,” “don’t hit your brother,” “no you can’t have cookies for dinner.”  so, when i can,  i like to make a wish come true.

the squirm has been asking me for cupcakes all week.  baking isn’t really my strong suit, but as a weekend surprise, i decided to give it a try.

i used the recipe on the back of my container of special dark cocoa powder.  you can find the recipe here.  i made the cupcakes during the day, while the squirm was at school.  he has trouble being patient for the whole cooking, cooling process.

IMG_4278the cupcakes baked up nicely, flat on top for easy frosting, and very dark and chocolate-y!!  when i asked the squirm what kind of icing he would like, “chocolate? vanilla?”  he replied, “purple icing.”

i was initially concerned that this wasn’t really an option, but then i remembered that my mom had given me some powdered food coloring that she didn’t need.

sure enough, we had violet, and voila!  lavender butter cream was born.  i found a simple vanilla buttercream (by searching pinterest of course!) here.  i sprinkled in a little violet powder as it was mixing.  i try to use food coloring in moderation, so i didn’t full-fledged flaming purple, but the squirm appreciated it nonetheless.  hooray for yes!
