as much as i strive to make our home a “yes” environment, i sometimes feel like i am constantly saying “no no no!”
“please don’t jump on the couch,” “don’t hit your brother,” “no you can’t have cookies for dinner.” so, when i can, i like to make a wish come true.
the squirm has been asking me for cupcakes all week. baking isn’t really my strong suit, but as a weekend surprise, i decided to give it a try.
i used the recipe on the back of my container of special dark cocoa powder. you can find the recipe here. i made the cupcakes during the day, while the squirm was at school. he has trouble being patient for the whole cooking, cooling process.
the cupcakes baked up nicely, flat on top for easy frosting, and very dark and chocolate-y!! when i asked the squirm what kind of icing he would like, “chocolate? vanilla?” he replied, “purple icing.”
i was initially concerned that this wasn’t really an option, but then i remembered that my mom had given me some powdered food coloring that she didn’t need.
sure enough, we had violet, and voila! lavender butter cream was born. i found a simple vanilla buttercream (by searching pinterest of course!) here. i sprinkled in a little violet powder as it was mixing. i try to use food coloring in moderation, so i didn’t full-fledged flaming purple, but the squirm appreciated it nonetheless. hooray for yes!
