if you ask mr p and the squirm what their favorite meal is, they are probably both going to say, “pizza!” i was inspired by my friend sheila to try to make pizza at home, for a healthier alternative to take-out.
preheat your oven to 450.
i started with a pre-made extra thin and crispy crust. brush crust with olive oil and finely minced garlic. spread a thin layer of grated mozzarella, then add sliced roma tomatoes, turkey pepperoni, thinly sliced onion, mushrooms and fresh baby spinach. sprinkle with italian herbs and parmesan.
reduce oven temperature to 425, put pizza directly on oven rack and back 8-10 minutes.
we had a salad on the side and voila! healthy, quick, delicious dinner!
