whipping it up on wednesday

so wednesday is the longest day of the week for me.  mr p teaches piano after school and doesn’t get home until close to 7:30. when i look at the situation rationally, 4.5 hours with two toddlers shouldn’t be a big deal.  i mean, some days we are all home all day together and nothing disastrous happens….

there is something that happens though, usually around 6:30-6:45.  it is like just when i think i am in the clear, everyone goes completely nut balls and mr p comes home to find us all sitting tear-stained in our respective corners.

i am convinced that part of the problem lies in the dinner-making process. i am always trying to create some kind of home-cooked, balanced meal that can be created while kids cavort underfoot. then i get stressed when it doesn’t go smoothly.  last week i wised up and served hot dogs and mac and cheese.

it was definitely easy to prepare, and went over fairly well.  so this week i decided to stretch myself a little further and try this recipe.


baked chicken tenders

preheat oven to 425
spray cookie sheet with cooking spray
put 1/2-1 cup bread crumbs and 1/2 cup paremesan in a zip lock baggie.  add salt, pepper and spices of choice.
toss chicken tenders with approx 2T mayo to coat.
shake tenders in baggie to cover with bread crumbs.
arrange coated tenders in single layer.
bake 8 minutes on one side, turn and bake 8 minutes on the other side.
tada! you’re done!

i gotta say, it was really easy, especially once i had the tenders on the sheet and ready to go.  i think i needed to kick the spices up a notch.  it was tasty and the panko bread crumbs gave it a nice crunch, but the chicken needed a little more pep.  maybe spicier mayo and let it soak for an hour before baking?  i have another new dish ready to try tomorrow night, so stay tuned!!
